Potato gnocci in a tomato sauce

Instructions

Step 1
Add the flour, egg, and mashed potatoes and mix until all ingredients are combined, do not overwork the dough.
Step 2
Roll out your dough into a log and cut into bite sized pieces. Boil in salted water for 2 minutes before frying in the olive oil until the outside becomes a little crispy.
Step 3
Using the same oil but removing the gnocci, sweat the onions and garlic before adding the tomatoes, peppercorns, chopped basil until fragrant. Then add the water and tomato puree and simmer until thickened. If it hasnt thickened enough just add a bit more tomato puree.
Step 4
Add the gnocci to the sauce and mix them until fully coated before serving.
