FRIED MILK

7 steps
Prep:20minCook:20min
Have you ever heard of LATTE FRITTO (“fried milk”)? It’s a classic Italian dessert and it is also sometimes referred to as “crema fritta” (“fried cream”) 😍 For a vegan alternative, you can replace normal milk with soya milk and you can simply avoid the egg yolks (you might need to add a bit more cornstarch instead) 😋 Serve them hot or cold, anyways they will taste MAMMA MIA 🤤

Instructions

Step 1
Pour 750ml milk in a pot over medium low heat and bring to a simmer with some lemon and orange zest and cinnamon sticks. Simmer for 7-8 mins and set aside.
Step 2
In a bowl add the remaining 250ml (cold) milk and whisk it with cornstarch, sugar and egg yolks. Add your hot milk in, give it a nice mix and pour everything back to the pot over medium low heat. Bring to a boil and keep whisking for about 5-10 minutes or until you have a cream.
Step 3
Pour your cream into a square dish (previously buttered so it will be easier to remove the cream once cold) and rest in the fridge for a couple of hours.
Step 4
Flip your creamy square on a wooden board (if it is not coming out of the dish, simply carefully immerse the dish into a pot full of boiling water for 10 seconds).
Step 5
Cut your square into 9 little squares.
Step 6
Dip each square into some cornstarch and egg wash and fry in some hot oil for a couple of minutes on each side.
Step 7
Drain on some kitchen paper and cover with caster sugar. Buon appetito!
