Creamy Chicken & Bacon Pasta Bake Serves: 4–6 Prep Time: 15 mins Cook Time: 25–30 mins --- Ingredients Main 1 pack bacon, chopped 2–3 chicken breasts, chopped 2 large handfuls spinach 1 punnet baby tomatoes, chopped 300–400g penne pasta Sauce 300ml double cream 1 cup grated Parmesan (plus extra for topping) 1–2 tsp Italian herbs ½–1 tsp garlic salt --- Instructions 1. Cook the Pasta 1. Bring a large pan of salted water to a boil. 2. Add the penne and cook until al dente. 3. Drain and set aside. --- 2. Make the Chicken & Bacon Mix 1. In a large pan, fry the chopped bacon until it starts to crisp. 2. Add the chopped chicken and cook until fully done. 3. Add the chopped tomatoes and spinach. 4. Cook until the tomatoes soften and the spinach wilts. 5. Take off the heat and set aside. --- 3. Make the Creamy Sauce 1. Pour the double cream into a small saucepan. 2. Add the grated Parmesan, Italian herbs, and garlic salt. 3. Stir on low heat until the cheese melts and the sauce thickens slightly. 4. Remove from heat. --- 4. Layer the Bake 1. Preheat oven to 180°C (350°F). 2. In a baking dish, add a layer of cooked pasta. 3. Add a layer of the chicken/bacon/spinach/tomato mix. 4. Spoon over some of the creamy sauce. 5. Repeat the layers until everything is used. 6. Finish with a final drizzle of sauce and plenty of Parmesan on top. --- 5. Bake 1. Place in the oven for 15–20 minutes, until golden and bubbling. 2.
