Instructions
Step 1
Saute 2 onions, 1 cup carrots, and 4 cloves garlic about 10 minutes. Add 3 cups diced bread and cook another 5 minutes.
Step 2
Break up the 2 x 28oz whole tomatoes in a food processor or with fork. Add to pot along with 4 cups chicken stock, 1/4 cup wine, basil, ~1 Tbsp salt, and 1.5 tsp pepper. Boil then simmer 45 minutes
Step 3
In toaster oven make croutons: toast 3 cups diced bread (or more!) And season with oil, salt, pepper, garlic powder.
Step 4
Serve soup with croutons and parmesan
