medium, peeled & shredded, Honeycrisp, Pink Lady, or green apple for extra crunch
2eggs
hard-boiled, sliced or chopped
4plum tomatoes
sliced or diced
sweetcorn

/walnuts, for crunch, Optional
2 Tbspolive oil
1 Tbspbalsamic vinegar
½ tsphoney
optional, balances the vinegar
¼ tspsalt
¼ tspblack pepper

shredded, romaine or iceberg
Instructions
Step 1
Assembly: Add shredded lettuce, shredded carrots, and shredded apples into a large bowl.
Step 2
Add the plum tomatoes and boiled eggs on top.
Step 3
Drizzle the balsamic dressing over everything.
2 tbsp olive oil 1 tbsp balsamic vinegar ½ tsp honey (optional, balances the vinegar) ¼ tsp salt ¼ tsp black pepper ¼ tsp garlic powder (optional) A squeeze of lemon (optional, keeps the apples fresh) Whisk until smooth.
Step 4
Toss lightly (don’t over-mix — it bruises the apples).
Step 5
Taste and add more salt/pepper if needed.

Tips to Make It Even Better: Add apples last or drizzle them with lemon so they don’t turn brown. If you like more richness, add 1 tbsp mayo to the dressing to make it creamy. For protein, you can add tuna, grilled chicken, or chickpeas.
