Step 1
Heat olive oil in a pot to medium high. Fry the onion, leeks and garlic together with salt and pepper until translucent, 7-10 minutes. You can add a glug of broth to the pot halfway through the cooking time. Next add the cream or cottage cheese, then water, broth and pasta. Bring to a boil then simmer covered 10 minutes (or the time it takes for your particular choice of pasta). Finally add the spinach, cheddar and parmesan and stir to melt the cheese.
