Instructions

Step 1
Soak the dried fruits in the orange juice, zest, and brandy for at least 30 minutes (up to 1 week in fridge, stirring daily).
Step 2
Mix the ground flaxseed with 12 tbsp water or beat eggs.
Step 3
Soften vitalite or coconut oil and mix with maple syrup and skinny syrup.
Step 4
Mix dry ingredients together (flour, spices, baking powder, tapioca starch or cornflour).
Step 5
Stir in the apple and carrot (or alternatives) into the fat mixture, then add the dry ingredients and mixed fruit, including any soaking liquid.
Step 6
Spoon into individual pudding bowls or a large pudding bowl.
Step 7
Place a saucer in the slow cooker, add pudding bowls, fill halfway with boiling water or place in a steamer. Cook on low for 2-3 hours in slow cooker or 7 hours in steamer for individual puddings, 3-4 hours slow cooker or 2-3 hours steamer for larger puddings.
Step 8
Store for 6 weeks or freeze up to 1 year.
Step 9
Steam, microwave, or slow cook to reheat.
