Ingredients
2 servings
8 ozlean ground beef
9 ozsweet potato
with skin
1carrot
shredded
0.5avocado
sliced
2eggs
soft boiled
⅔ cuprice
cooked
1 cupspring mix
½ cuplow fat cottage cheese
Sauce
Instructions
Step 1
Parboil chopped sweet potatoes, drain, and set aside
Step 2
Cook ground beef on medium heat and move to empty sweet potato pan.
Step 3
Add sauce ingredients to beef and cook until thickened
Step 4
Add sweet potatoes to residual beef fat in beef pan and crisp. Season with salt and pepper to taste
Step 5
Put 1/3 cup cooked rice in the bottom of each of two bowls, top with beef, half the shredded carrot each, 1 soft boiled egg, cottage cheese, sliced avocado, and spring mix.
