Step 1
Preheat smoker to 325 degrees
Step 2
Add the whole carrots to a disposable aluminum pan, then pour in the chicken stock, add the butter and thyme, dust with Cajun seasoning, and drizzle a little Steen’s syrup on top.
Step 3
2. Place the uncovered pan on a 325 degree smoker and roast for 30–40 minutes to melt the butter, activate the seasoning, and start the smoke.

3. Stir the carrots, cover the pan with a lid or foil, and braise for 45–60 minutes.
Step 5
4. Check for tenderness after the first hour, then continue braising another 45–60 minutes until the carrots are fully spoon-tender.
Step 6
5. Remove the lid and cook uncovered for 30–45 minutes to let the liquid reduce into a thick glaze.
Step 7
6. Drizzle on more Steen’s syrup, brush to coat, and cook uncovered for another 15–20 minutes to set the glaze.
