Place peeled and chopped potatoes, Ghee, Mushroom base, and canned corn into a pot. Provide enough water to fully cover the ingredients with an inch of water. Bring this mixture to a boil. Boil until the potatoes mash and fall apart. The resulting broth will be starchy and fatty. While the potatoes are boiling, cook, drain, and set aside the meat. Chop up your kale, Mushroom, and green onion (half) and add them to the boiling pot. Once boiling resumes, reduce heat to simmer. Add cream and cooked meat. Add salt and pepper to taste. Top with parsley and green onion. For additional toppings, try tossing potato peels.in olive oil and salt, then baking them at 345F until crispy. Additionally, you may shave Irish Cheddar for a cheese finish.
