Instructions

Step 1
Preheat oven to 450* and set one rack on the lowest space and one rack in the middle....toss potatoes in a bowl with olive oil...spread potatoes on parchment lined baking sheet...Roast potatoes on the lower rack for 20 minutes...after removing the potatoes, turn down oven to 375*...Heat a large skillet to medium heat...season chicken with 1 tsp kosher salt, half tsp black pepper...add oregano...add a touch of olive oil to the skillet and sear the chicken thighs 5 minutes on both sides...turn down the skillet, transfer chicken thighs to another container...sear the garlic and the rest of the olive oil...after the garlic is done add 1 cup of white wine and chicken stock...cook for 5 minutes then add lemon juice...in a large pot combine everything until it's tender...cook your white rice on the side...Enjoy
