Step 1
Combine onion, apple cider vinegar, and salt in a glass storage container. Let sit for a least 2 hours.
Step 2
When onions are ready, heat ovven to 400F. Place apple slices on parchment paper-lined sheet pan and roast for 20 minutes.
Step 3
While apples are roasting, whisk together dressing ingredients. Remove apples from oven. In a large bowl, toss together apples, kale, arugula, and red onions. Top salad with dressing and toss to coat.
