Herb crusted chicken
rice vermicelli
thai fish sauce
lemon juice
or lime
mirin
coconut milk
Chicken bone broth
Instructions

Follow instructions to cook Herb crusted chicken - pad Thai version

Follow instructions to make soup - used SuperSoup brand, extra broth instead of water

Add fish sauce, lemon/lime juice, and mirin to soup to taste. Stir for several minutes, then taste again for certainty

Add cooked and diced chicken in final minutes of soup cooking, stir thoroughly including any excess sauce from pan not burnt

Step 5
Once soup finished cooking, ladle broth over rice vermicelli noodles, let sit several minutes until noodles cooked. Once noodles desired texture, ladle much of the broth back into the pot and exchange for chicken and vegetables. Serve hot Alternative: cook noodles with hot water separately, then strain and milk with soup.
