Step 1
1. Fry guanciale strips on medium heat until golden. Remove meat, leave the fat in the pan!

2. Whisk eggs, yolks, pepper, and cheese into a thick paste.
Step 3
3. Boil spaghetti until al dente. Reserve 1 cup of starchy pasta water.
Step 4
4. Slowly whisk a splash of hot pasta water into the egg mixture (this prevents curdling!).
Step 5
5. Toss pasta in the guanciale fat. remove pan from heat. Pour in the egg mixture and stir vigorously until creamy. Top with crispy meat.
