Carbonara, or maybe it’s a ‘half’onara, as I’m substituting pecorino with Parmesan and guanciale with bacon. Delicious nonetheless and you only need 4 ingredients..

Instructions
Step 1
Fill a saucepan with boiling water and salt it. Add your spaghetti and cook for 11 minutes.
Step 2
In the meantime, dice your bacon and cook in a hot pan. There should be enough fat from the bacon to help cook, but otherwise add some olive oil.
Step 3
Separate your yolks and egg white and add your yolks to a bowl. Add in grated Parmesan and use a hand whisk or fork to combine. Season generously with pepper
Step 4
Remove your bacon from a pan after adding a spoonful into your yolk and Parmesan
Step 5
When your pasta is cooked, reserve some pasta water and then drain.
Step 6
Take the pan off the heat, add your yolk mix, then your spaghetti then pasta water. Mix together well.
Step 7
Serve up your spaghetti, top with bacon and spoon over some of the sauce. Add more Parmesan if you like, then season again well with pepper. Enjoy!
