Ingredients

680 gramsChicken Thighs
bone-in, skin-on or boneless, skinless
1 tablespoonOlive Oil
Salt
Black Pepper
To taste
1 teaspoonSmoked Paprika
½ teaspoonDried Oregano
60 gramsUnsalted Butter
¼ cupChicken Broth
30 mLLemon Juice
freshly squeezed
4 clovesGarlic
minced
1 tablespoonFresh Parsley
chopped, for garnish
2 piecesLemon Slices
thinly sliced, for topping and garnish
Instructions
Step 1
Prep Chicken: Pat the chicken thighs dry. Season generously on all sides with salt, pepper, smoked paprika, and oregano.
Step 2
Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken skin-side down for 5-7 minutes until the skin is golden and crispy. Flip and sear for 2 minutes. Remove and set aside.
Step 3
Make Sauce Base: Reduce the heat to medium-low. Add the butter and minced garlic to the skillet, cooking for 1 minute until fragrant.
Step 4
Create Sauce: Whisk in the chicken broth and lemon juice. Bring the sauce to a low simmer, scraping up any browned bits from the pan.
Step 5
Finish Cooking: Return the chicken thighs to the skillet, nestling them into the sauce. Top the chicken with a few thin lemon slices.
Step 6
Bake or Simmer: Finish cooking the chicken in the preheated 190°C (375°F) oven for 10-15 minutes, or simmer on the stovetop (covered) until the internal temperature reaches 74°C (165°F).
Step 7
Serve: Transfer the chicken and sauce to serving plates. Drizzle the pan sauce over the chicken and garnish generously with fresh chopped parsley.
