Ingredients

1 poundblack beans
washed
10 cupswater
1 poundsmoked turkey
or ham, chopped
1onion
chopped
2stalks celery
chopped
1 cupshredded carrots
14.5 ouncecan diced tomatoes
1 tablespoonminced garlic
4 teaspoonsgarlic powder
4 teaspoonsdried parsley
1 teaspoonworcestershire sauce
2cubes chicken bouillon
1bay leaf
½ teaspoonground black pepper
½ teaspoonground mustard
¼ teaspoonground cayenne pepper
¼ teaspoondried oregano
¼ teaspoondried thyme
Instructions
Step 1
In an eight quart stock pot, add rinsed black beans, water, turkey, onion, celery, carrots, diced tomatoes, minced garlic, garlic powder, parsley, Worcestershire sauce, bouillon cubes, bay leaf, pepper, mustard, cayenne pepper, oregano and thyme. Cover and bring to a boil.
Step 2
Reduce heat and simmer for 2 hours. Discard bay leave and serve.
