Instructions

Step 1
Place chicken in pot. Sprinkle on chili powder, cumin, salt & pepper.
Step 2
Add onion, bell pepper, diced tomato, rotel, chicken broth, tomato paste, chipotle peppers, black beans, and Serrano (optional).
Step 3
Stir, and cook on low for 6 hours.
Step 4
Remove from heat
Step 5
Pull chicken out and shred. Then return to pot.
Step 6
Add salt to taste.
Step 7
Can add 1 juiced lime or use lime as garnish
Step 8
Serve with grated cheese, sour cream, cilantro, avocado and crushed tortilla chips to top
