1.5 lbboneless skinless chicken breasts
or tenderloins, cut into 1 1/2-inch pieces
2 tablespoonsall-purpose flour
¾ tspkosher salt
divided
½ tspblack pepper

2 tablespoonsolive oil

1 tablespoonunsalted butter
melted
8 ozmushrooms
sliced, cremini or button
2 tablespoonsshallot
finely chopped, or onion
2cloves garlic
minced
½ cupchicken broth
½ cupdry marsala wine
⅓ cupheavy cream
1 ½ teaspoonsfresh thyme
or 1/2 tsp dried
fresh parsley

Instructions
Step 1
Heat oven to 425°F. Line a large rimmed sheet pan with parchment or foil.
Step 2
In a bowl, toss chicken with flour, ½ tsp salt, and ¼ tsp pepper.
Step 3
Drizzle with 1 tablespoon olive oil and toss lightly.
Step 4
Add mushrooms, broccolini, shallots, and garlic to the pan.
Step 5
Drizzle with remaining olive oil, sprinkle remaining salt and pepper, and toss.
Step 6
Spread into a single layer.
Step 7
Roast 20-25 minutes, stirring once halfway, until chicken is cooked and mushrooms are browned.
Step 8
Whisk broth, Marsala wine, melted butter, and thyme.
Step 9
Pour evenly over pan and return to oven 8–10 minutes, until reduced and glossy.
Step 10
Remove pan, drizzle cream over everything, gently toss.
Step 11
Return to oven 5 minutes, just until lightly thickened.
