Step 1
Preheat oven to 350°. Place potatoes on baking sheet. Pierce each with a fork and bake for 45 minutes or until desired doneness. Add ground beef to medium size skillet , salt and pepper and cook for 10 to 12 minutes, until fully cooked and crumbled. Remove ground beef from pan and add butter. Once butter is melted add kale and toss in the butter, cover pan and let kale steam for 5 minutes until wilted. Season with a pinch of salt and set aside. In a medium bowl mix ingredients for ranch dressing and set aside. Cut potatoes down the middle load with meet, kale, ranch, bbq and put crumbled bacon on top. Garnish with green onion and pickled jalapenos.
