Step 1
Preparation: Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve 120 ml of pasta water, then drain. Slice sausages and vegetables.
Step 2
Cooking: Heat olive oil in a large pan over medium-high heat. Add sausage slices and cook for 5-6 minutes, turning occasionally, until browned and cooked through. Add onion and bell peppers. Cook for 3-4 minutes until softened but still slightly crisp. Reduce heat to medium. Stir in BBQ sauce, sweet chilli sauce, soy sauce, smoked paprika, and garlic powder. Simmer for 2-3 minutes.
Step 3
Assembly: Add cooked pasta to the pan along with a splash of reserved pasta water. Toss until the pasta is evenly coated and glossy.
Step 4
Serving: Serve hot, topped with optional cheese, herbs, or chili flakes.
