Instructions

Step 1
Preheat your oven to 375°F (190°C). Lightly coat a small baking dish (around 5-6 inches, or two jumbo muffin cups) with non-stick cooking spray or oil.
Step 2
Combine the wet ingredients in a medium bowl. Whisk together the eggs, cottage cheese, milk, and seasonings until well combined. For a smoother texture, you can briefly blend this mixture with a hand blender or in a food processor.
Step 3
Stir in your mix-ins and half of the shredded cheese.
Step 4
Pour the mixture into your prepared small baking dish or muffin cups. Sprinkle the remaining shredded cheese on top.
Step 5
Bake for approximately 25-30 minutes, or until the center is set and the edges are golden brown. The quiche will puff up in the oven but may settle after cooling.
Step 6
Cool for a few minutes before serving.
