Instructions
Step 1
Place olive oil in large skillet and warm it over medium heat. Season the chicken with salt and pepper, place in pan and cook until browned and cooked through (8 - 10 minutes)
Step 2
Remove chicken from the pan and let it rest 10 minutes
Step 3
While the chicken is cooking and resting, prepare the rice
Step 4
Layer the rice, cilantro, beans, chicken, onion, tomatoes and cheese on the tortillas. Roll them up tight and set then aside.
Step 5
Place the remaining pluve oil in skillet and warm it over medium-high heat. Place burritos in pan and toast until they are browned on each side, about 2 minutes, turning them over just once.
Step 6
Serve with guacamole, salsa, and sour cream.
