Instructions

Cook the pasta

Bring a large pot of well-salted water to a boil.

Cook Banza rigatoni until just al dente (do not overcook).

Drain and set aside.

Brown the sausage

In a large skillet over medium heat, cook the sausage, breaking it up, until fully browned.

Drain excess fat if needed, leaving about 1 tablespoon in the pan.

Add eggplant and portobello mushrooms to the skillet.

Cook 6–8 minutes, stirring occasionally, until softened and lightly browned.

Add broccoli and cook 3–4 minutes more until just tender.

Build the sauce

Stir in garlic and cook 30 seconds until fragrant.

Add crushed tomatoes, salt, sugar, and red pepper flakes.

Simmer 10–12 minutes to concentrate flavor and thicken slightly.

Stir in heavy cream, grated Pecorino, and chopped basil.

Transfer to a baking dish.

Top with mozzarella and remaining Pecorino.
