Ingredients

1 ½ cupsfull-fat cottage cheese

¼ cupheavy cream
¾ cupwhole-milk mozzarella

½ cupsharp cheddar
freshly grated
¼ cupparmesan
finely grated
½ cupItalian sausage
cooked, or breakfast, browned and drained
¼ cupbacon
cooked, chopped
¼ cuppepperoni
quartered
2 tablespoonsalmond flour
½ teaspoongarlic powder
½ teaspoononion powder
½ teaspoonsmoked paprika
salt
to taste
black pepper
to taste
1 tablespoonsmarinara
low-carb, or tomato paste thinned with olive oil
Instructions
Step 1
Preheat oven to 375°F (190°C) and grease an 8×8 baking dish.
Step 2
Add the cottage cheese, eggs, egg yolk, and heavy cream to a blender. Blend until completely smooth.
Step 3
In a large bowl, mix the blended mixture with the mozzarella, cheddar, Parmesan, almond flour, garlic powder, onion powder, smoked paprika, salt, and pepper until just combined.
Step 4
Fold in the sausage, bacon, and pepperoni, distributing evenly.
Step 5
Let the mixture rest for 5 minutes.
Step 6
Pour into the prepared baking dish and smooth the top. Lightly spoon marinara over the surface if using.
Step 7
Bake uncovered for 30–35 minutes, until set around the edges with a slight jiggle in the center.
Step 8
Broil for 1–2 minutes until lightly browned and bubbly.
Step 9
Remove from the oven and let rest for 10 minutes before slicing.
Step 10
The center should jiggle slightly when done — it will finish setting as it rests.
