Ingredients

1 lblean ground beef
1onion
medium, diced
4cloves garlic
minced
1zucchini
diced
1bell pepper
diced
1 cupspinach
1 x 14.5 ozcan low sodium diced tomatoes
1 cuplow sodium beef broth
1 tablespoonitalian seasoning
1 teaspoonsalt
½ teaspoonpepper
1 ½ cupsdry penne pasta
1 x 15.5 ozcan cannellini beans
drained
½ cupshredded parmesan cheese
1 cupmozzarella cheese
Instructions
Step 1
• In a 12-inch deep skillet, brown ground beef and cook until no longer pink, breaking it up with a spoon as you go, then add diced onion and minced garlic, and cook for about 2 minutes. Then add diced zucchini, diced pepper, and fresh spinach. Cook for a couple of minutes. Add diced tomatoes and beef broth, and cook until spinach is wilted. Add Italian seasoning, salt, pepper, and dried pasta. Mix together and bring to a boil. Turn the burner to medium-low, cover with a lid, and simmer for about 20 minutes or until the pasta is al dente. Remove lid and sprinkle top with Parmesan and mozzarella cheese.
