Instructions

Step 1
In a mixing bowl, add ground pork, a small pinch of salt, minced garlic, egg, cooking wine, low-sodium soy sauce, white pepper, and oyster sauce. Mix well.
Step 2
Place the green onion on top and drizzle with warm olive oil. This enhances the aroma of the green onion while providing beneficial monounsaturated fats.
Step 3
Stir the filling in one direction for 2-3 minutes until it reaches a paste texture and becomes sticky and lighter in color. Set aside for 1 hour or cover with plastic wrap and refrigerate overnight.
Step 4
Finely chop chives and mix with sesame oil and 1 tablespoon of olive oil. Mix chive with pork mixture just before wrapping.
Step 5
Add 1 tablespoon of olive oil to a nonstick pan. Place dumplings in with pleats side up.
Step 6
Heat over medium fire until one side becomes browned. For extra crispness, turn over the dumpling carefully and brown the pleats side too.
Step 7
Add 1/4 cup of water and cover the lid immediately. Continue heating until all water evaporates.
Step 8
Heat over low fire until the bottom becomes crispy and golden brown.
Step 9
Prepare dipping sauce by combining all dip ingredients. Adjust salt to your taste preference, keeping total daily sodium in mind.
Step 10
Serve immediately with dipping sauce on the side.
