Step 1
Crush the Cornflakes: Lightly crush by hand to keep texture.

Season the Cornflake Crumb: Mix crushed cornflakes, 2 tbsp spice blend, and extra salt if desired.

Set Up Your Dredging Station: Have three bowls - 1 for arrowroot (or mix) with salt & pepper, 1 for egg wash, and 1 for cornflake crumb.

Coat the Chicken: Pat chicken dry, toss in arrowroot (or mix), dip in egg wash, and press into cornflake crumb.
Step 5
Deep Frying: Heat fryer to 170-175°C, fry in small batches for 6-8 minutes for strips/mini fillets (8-10 for thigh pieces), and drain on rack.
