Ingredients
4 servings
450gjasmine rice
cooked, cooled
3 tspsoy sauce
1 dark soy and 2 regular
1 Tbspchilli crisp oil
1 Tbspsesame oil
1cucumbers
large, thinly sliced
1 cupedamame
1 bunchgreen onions
thinly sliced
1avocado
chopped
1 packetfrozen southern breaded chicken breast
or sweet chilli chicken, cooked
peanuts
chopped, optional
¼ cupgreek yoghurt
¼ cuplight mayo
50mlsweet chilli sauce
½ tsppaprika
water
to thin
Instructions
Step 1
Preheat the oven to 200°C and line a tray with baking paper.
Step 2
Toss the cooled rice with soy sauce, chilli crisp oil, and sesame oil until coated.
Step 3
Spread out evenly and bake for 30 to 40 minutes, tossing halfway until golden and crispy.
Step 4
Set aside.
Step 5
Cook the chicken as instructed on the packet.
Step 6
To assemble, add cucumber, edamame, green onion, avocado, cooked chicken, and crispy rice to a large bowl.
Step 7
Make the dressing by whisking all dressing ingredients until smooth, using water to thin as needed.
Step 8
Taste and adjust seasoning.
Step 9
Pour dressing over the salad and toss gently.
Step 10
Garnish with sesame seeds or chopped peanuts.
