Ingredients

35Meatballs
thawed, cut in half and seared in a hot pan for a crust
1whole onion
I put mine in food processor to turn into mush
3carrots
3celery sticks
2 tspdried parsley
2 tspdried basil
2 tspsalt
1 tsppepper
64 ozchicken stock
8 ozOrecchiette
Any noodle that has a cook time of 9-11 minutes You don't want soggy noodles!!!
3 handfulsraw spinach
Parmesan cheese
or mozzarella, for topping, The standard is parm but i prefer mozz
Instructions
Step 1
Thaw meatballs, cut in half and saute on stove or however (you can skip the saute part but i think they taste better with a crust)
Step 2
Turn instant pot on Saute and chop veggies while heating up.
Step 3
Add oil to instant pot and saute all veggies until reasonably soft.
Step 4
Add spices and stir
Step 5
Add chicken stock and meatballs, stir
Step 6
Set Instant Pot to 4 minutes. When done use quick release until you can open
Step 7
Add noodles, stir.
Step 8
Set instant pot to 2 minutes. When done use quick release until you can open
Step 9
Add spinach and stir till combined, let wilt in broth for a few minutes while you grate your cheese.
Step 10
Add cheese and enjoy!
