RED BEANS AND RICE This dish goes well with almost any kind of meat, and can be a meal by itself. Serves 6.

Instructions

Step 1
In a large pot, heat the olive oil.
Step 2
Saute the onion just until translucent. Drain the kidney beans, reserving ½ cup of the liquid. Add beans, garlic, salt, pepper, Tabasco, thyme, sage and basil. Saute, stirring care-fully, until beans are heated through.
Step 3
Stir in lemon juice, then add the broth and the reserved bean liquid to the pot. Bring to a boil. When liquid is boiling, pour in the rice. Stir, allow contents of pot to resume boil ing, then cover and turn the heat down to low. Simmer, covered, for 20 minutes or until rice has absorbed all of the liquid. Stir and adjust season: ings to taste.
