Instructions

Step 1
Preheat smoker to 300
Step 2
Prep ribs (remove membrane, etc.)
Step 3
Season ribs with Cajun seasoning
Step 4
Lay one rack of ribs meat side down and add uncased boudin on top
Step 5
Cover with second rack of ribs and tie together with butcher’s twine
Step 6
Smoke uncovered for 2 hours, spritzing with water occasionally
Step 7
Wrap with foil and add a cup of water to steam and return to smoker for 1 hour.
Step 8
Unwrap and brush on Steen’s pepper jelly and return to pit for 20 minutes
Step 9
You want the ribs overdone to pull bones and make a roast
