Instructions

Step 1
Prepare Marinade: In a medium bowl, whisk together olive oil, orange juice, lemon juice, lime juice, minced garlic, coconut aminos, low-sodium soy sauce, chili powder, cumin, oregano, black pepper, and chopped cilantro until well combined.

Prepare Chicken: Score the top of each chicken breast with shallow diagonal cuts (about ¼ inch deep) to help marinade penetrate.
Step 3
Marinate: Place chicken breasts in a large ziplock bag or glass container. Pour marinade over chicken, ensuring all pieces are coated. Seal and refrigerate for 4-8 hours, turning occasionally.
Step 4
Preheat grill to medium heat

Grill for 6-8 minutes per side until internal temperature reaches 74°C (165°F)
Step 6
Let rest 5 minutes before serving
Step 7
Serve: Slice chicken and serve over quinoa with black beans and roasted vegetables on the side. Drizzle with any remaining pan juices.
