Instructions
Step 1
Mix dry ingredients in a bowl. Create a well and add the water. Mix well to make sure there are no dry bits. Cover and rest for 15 mins.
Step 2
After 15 mins. Do 8 stretch and folds turning the bowl 90° each time. Let rest for another 15 mins and do another set of stretch and folds.
Step 3
After the two sets of stretch and folds, let rest at room temperature for 1 - 1.5 hours. The dough should of grown exponentially.
Step 4
Line a baking dish with baking paper. Do a few flip and folds in the bowl before transferring to the baking dish. Cover and let rest for another 1 - 1.5 hours at room temp.
Step 5
Whilst the dough is resting in the dish, preheat oven to 200°C, peel the garlic, add the cloves to a ramekin and cover them with olive oil. Cover the ramekin with tin foil and roast for 40mins
Step 6
Take the garlic out to let cool slightly and turn the oven up to 220°C. Once the bread has finished proofing, oil your fingers using the garlic oil and dimple the dough to help spread it out before topping it with desired ingredients.
Step 7
Bake at 220°C for 25-30 mins or until sufficiently browned for your liking
