900gboneless skinless chicken breasts
or thighs
4carrots
medium, sliced
2zucchini
medium, sliced into half-moons
½ cupchicken broth
¼ cuplemon juice
fresh or bottled
1lemon
Zest of, optional but excellent
4garlic cloves
minced
1 tspdried oregano
1 tspdried thyme
½ tsppaprika
½ tspblack pepper
½ tspsalt

Instructions

1. Layer the Slow Cooker

Place carrots on the bottom

Add chicken on top

Scatter zucchini over the chicken

2. Mix & Pour Sauce

In a bowl, whisk together:

Pour evenly over everything.

Chicken should shred easily with a fork.

4. Shred Chicken

Remove chicken, shred with two forks

Return shredded chicken to the slow cooker

Stir gently to coat with sauce and vegetables
