Instructions
Step 1
1. Prep Meat
Pat beef cubes dry with paper towels.
Season generously with Salt and black pepper.
Step 2
2. Brown the Meat
Heat butter or tallow in pot over medium-high heat.
Add beef cubes in batches if necessary.
Sear on all sides until browned (about 8-10 minutes total).
Step 3
3. Declare and add liquid.
Pour in water or bone broth. Scrape up browned bits from bottom.
Step 4
4. Simmer Low and Slow
Cover with lid.
Reduce heat to low.
Simmer gently for 2-2.5 hours, until beef is tender.
Step 5
5. Serve
Stir in an extra knot of butter for richness before lading into bowls.
