Instructions

Prepare the bread:

Step 1
Cut (2) 1" slices from a brioche loaf.

Rachel says in the video that she prefers eggy bread. She also says in this article to use stale brioche or challah that is not pre-sliced.

Make the custard:

Step 3
Whisk the above ingredients in a standing mixer until they turn white.
Step 4
Add 1 cup of heavy whipping cream into the mixture and continue whisking.

Mixture is like an uncooked custard, process is finalized in a pan

Make the Crème Chantilly:

Step 6
Whisk until medium peak.
Step 7
Keep an eye on it - if you overwhip it, then it will separate.

Cook the bread:

Step 8
Set pan to medium-high heat.
Step 9
Dip bread lightly in custard. Do not oversaturate.
Step 10
Cook until golden brown.
