Instructions
Step 1
Preheat oven to 200C
Step 2
Take 1/2 the onion and grate.
Step 3
Combine mince, breadcrumbs, egg, garlic, ginger, and grated onion into a bowl. Use your hands to mix well.
Step 4
Roll tablespoons of the mixture into meatballs - it should make 12 to 16 meatballs.
Step 5
Place on a lined baking tray, spray with cooking oil, then bake in the over until golden brown (about 15 minutes, flipping halfway).
Step 6
Boil half a saucepan of water on the stove.
Step 7
Spiralise zucchini.
Step 8
Cook spaghetti as per packet directions. In the last 3 minutes, add your spiralised zucchini. Strain and place in bowls or containers.
Step 9
Take the other half of the onion and dice it. Grate carrot.
Step 10
Heat a frypan on the stove to medium high. Add oil, onion and carrot to fry pan and cook until soft.
Step 11
Add spaghetti sauce and simmer for 5 minutes. Add meatballs to quickly coat in sauce, then add on top of spaghetti.
