Instructions

Prepare Labneh

Step 1
Place yogurt into a piece of cheesecloth/muslin and tie top. Place in a sieve over a bowl and put something heavy on top to press it down. Leave (in fridge better) for 4 hours or overnight
Step 2
Unwrap the labneh from the cheesecloth and reserve the whey that is in the bowl for making scones or other goodies, just pop it in the freezer in a bag.
Step 3
Stir salt and honey into the labneh to sweeten as per your taste

Prepare grapes

preheat oven to 200C
Step 5
Place the grapes on a baking tray and bake for approximately 10 minutes or until the grapes have colapsed and juices running free

Prepare Pistachios

Step 6
Toast the pistachios in a dry pan for barely a minute till just coloured and aromatic
Step 7
Crush Pistachios into smaller pieces

Serve with Toppings

Step 8
Serve the spoonful of labneh in a bowl
Step 9
Add the baked grapes on top
Step 10
Drizzle maple syrup and the balsamic vinegar

Sprinkle pistachios

This dish is best served while the grapes are still warm from the oven
