Hot Cross Bun Lamb Burger

A super delicious way to have fun with your hot cross buns this Easter!
Please note cooking times will always vary depending on cooking appliances. Your lamb may need longer than 4hrs and that’s okay. It gives you more time to chill and relax with your family this Easter!
This recipe is based on 1/2 a lamb leg, that means the measurements used would need to be possibly increased by half or doubled for a whole lamb leg

Ingredients
4 servings
half leg of lamb
welsh
maris piper potatoes
mint sauce
hot cross buns
1 Tbspsmoked paprika
1 tspncinnamon
2 Tbspflakey salt
or 1 1/2 tspn normal salt
1 Tbsppepper
1 Tbspgarlic powder
1 tspnonion powder
400mlbeef stock
or lamb
2whole garlic
3 sprigsrosemary
1shallot
or 1 onion
For the gravy
Instructions
Step 1
First you want to preheat your oven to 150° (fan). Whilst your oven is preheating you want to drizzle the lamb with olive oil. You only need to lightly coat the lamb!

Then you want to season your lamb with, salt, pepper, cinnamon, smoked paprika, onion powder and garlic powder. Season to your liking though! Just be sure to rub it all in!
Step 3
Next, you want to cut your whole garlic in half, along with your shallot and place into your roasting pan. This will make the bed for the lamb. Add two sprigs of Rosemary to the pan too.

Now place your lamb on top, pour in your stock, be sure to not pour directly onto the lamb. Cover with foil and make sure it’s tight around the edges. We don’t want to lose any moisture.

Lastly, place your lamb into the middle of your oven and roast for a minimum of 4hrs. Turn half way through and reseal with foil once again. In the last 10 mins of cooking you want to allow the lamb to cook uncovered

Allow lamb to rest for 20-30 mins (covered) before shredding.
Roast potatoes
Step 7
First you want to rinse and peel your potatoes. You can do this step quite early on and just leave your potatoes submerged in cold water. You want to start cooking the potatoes 25 mins before the lamb is due to finish in the oven. Whilst the lamb is resting you’ll also have 30 mins of time to roast your potatoes.

When you’re ready you want to add a sprig of Rosemary to a pot of cold water, heavily salt, add your potatoes and bring to a boil.

Now the potatoes should only take 10-15 mins to become fork tender. At the 10 min mark of boiling, watch them closely. You don’t want them to be mushy!

Once ready, drain and then shake them. This will get them nice and fluffy. Then allow to cool for 10 mins before roasting. Whilst the lamb is cooling, add your oil to a roasting in pan and place in the oven at 210° (fan)

Now carefully add your potatoes to the oil, place into the oven and turn after 15 mins. Repeat and you’re done! Cooking times will vary depending on oven.

Mint gravy
Step 12
First you want to combine your butter and flour on a low-med heat. Stir for 2 mins.
Step 13
Now add your cooking juices from your rested lamb and stir, now add your stock and stir.
Step 14
Don’t forget all the goodness from your roasting pan! Add half a garlic head to your gravy, along with the shallot!
Step 15
Lamb just simply isn’t lamb without mint sauce! Add 3 tbsp of mint sauce and it’s optional but you can also add honey.
Step 16
Now give it a blend and there you go!
Step 17
Finally add the gravy to the meat, toast your hot cross bun and build your burger.
