White Bean Dumplings with Peanut–Soy Sauce

These white-bean dumplings are incredibly quick to prepare, naturally high in protein, and made from just a few simple pantry ingredients. Despite being soft and delicate, they hold their shape beautifully when cooked. They’re a great way to turn basic canned beans into a satisfying, wholesome meal in minutes.

3 Tbsppotato starch
50gflour
add more if needed
½ tspsalt
garlic powder

Peanut–Soy Sauce
4 Tbsppeanut butter
3 Tbspsoy sauce
2garlic cloves
grated
2 tspginger
freshly grated
1Chilli pepper
or A pinch of chili flakes or a few drops of hot sauce
2 tsphoney
or maple syrup, optional
6 Tbspwater
hot, to thin the sauce
2scallions
finely sliced
2 Tbsplime juice
1 tspSesame oil

Instructions
Preparing the Dumplings
Step 1

Blend the drained white beans into a smooth paste.
Step 2

Add starch, salt, and the flour.
Step 3

Knead the dough — if it feels too wet, add a little more flour.
Step 4

Roll the dumplings or shape into logs and cut into small dumplings (gnocchi style).
Step 5

Cook in salted boiling water until they float to the surface plus 3mins. Remove gently.
Step 6

Mix peanut butter, soy sauce, garlic, ginger, chili, and honey.
Step 7

Add hot water gradually until you get a creamy, pourable sauce.
Step 8

Add lime juice and sliced scallions. Bring to a boil.
Step 9

Add the sauce and 2–3 tablespoons of the dumpling cooking water to drained dumplings.
Step 10

Stir until everything is coated and glossy. Sprinkle with scallions and sesame. Serve immediately.
