Ingredients
8 servings
1 Tbspextra-virgin olive oil
1 Tbspfresh ginger
Peeled & minced
1red bell pepper
medium, diced
4 cupskale
curly leaf, stems removed, chopped
4green onions
White parts thinly sliced, green parts cut in 1 inch pieces
8 cupschicken broth
2 cupssweet potatoes
peeled, medium diced
1 x 15.5 ozcan red kidney beans
drained, rinsed
1 poundchicken breast
cooked, 1/2 inch dice
½ tsptumeric powder
½ tspJamaican Jerk Seasoning
1 x 13.66 fl ozcan unsweetened coconut milk
Instructions
Step 1
Heat 1 tbsp oil in a large heavy pot over medium heat.
Step 2
Add red bell pepper, green onion whites, and ginger. Cook stiring often until vegetables turn tender without browning.
Step 3
Stir in kale and scallion greens and cook for 1 minute
Step 4
Add broth and sweet potatoes and bring to a simmer. Cook until potatoes are tender, 5-10 minutes.
Step 5
Drain beans and add to pot along with cooked chicken, tumeric, and jerk seasoning. Return to a simmer.
Step 6
Finish by thoroughly stirring in coconut milk. DO NOT bring to a boil after coconut milk is added.
Step 7
Season with salt and pepper or soy sauce to taste and enjoy!
