Peanuts aren’t just one of America’s most sought-after ingredients; they’re also an easy and delicious way to boost your longevity. This hearty stew is inspired by maafe, a Senegalese spicy peanut stew typically made with beef, sweet potatoes, and carrots. We’ve left out the beef but kept the good-for-you peanuts and sweet potatoes in the mix. Plus, we give an extra dose of fiber with heart-healthy kale.

Instructions

Step 1
Heat the oil in a large soup pot over medium-high heat until it shimmers. Add the onion and pepper and sauté until they soften and just begin to brown, about 10 minutes. Add the ginger, garlic, cumin, and chipotle powder, stir well, and cook for another 2 minutes. Add the tomatoes, stock, and salt, and stir well. Remove the pot from the heat and use an immersion blender to make a smooth puree. Return the pot to medium-high heat and whisk in the peanut butter until fully combined. Add the sweet potatoes and kale, stirring to combine. As soon as the stew begins to bubble, lower the heat to a simmer and cover the pot. Cook until the sweet potatoes and kale are tender, stirring occasionally to prevent sticking, about 20 minutes.
Step 2
Garnish each bowl with chopped peanuts and cilantro and serve. Use peanut butter with no additives. The ingredients list on the jar should just say “peanuts.”
