Leblebi (Tunisian Chickpea Stew)
Leblebi is a popular Tunisian stew, that is typically eaten for breakfast. It is usually eaten with bread and topped with harissa paste, preserved lemons or some kind of poached or hard-boiled egg.

Ingredients

2 Tbspolive oil
1onion

2 tspcumin seeds
1 tsppaprika
½ tspcrushed chili flakes
1 bunchcilantro
stems + leaves
2garlic cloves
1 x 400gcan tomatoes
720gcans chickpeas
homecooked are best!

Instructions
Step 1
Soak 400g chickpeas overnight. Rinse, and cook for 1-2 hours until soft. (optional)
Step 2
For the Leblebi, start by sautéeing the onion and cumin seeds on medium-low heat until completely soft. This may take up to 15 minutes.
Step 3
Add cilantro stems, garlic and the remaining spices and cook for 1-2 more minutes.
Step 4
Deglaze with tomatoes, then add the chickpeas and enough of their cooking water to cover everything by at least 3 cm. Season with salt to taste.
Step 5
Simmer for 20-30 minutes, then add about 1/4 to a blender and pulse until roughly puréed. Add the purée back to the pot/pan and stir to thicken.
Step 6
Serve with harissa paste, flatbread, brown rice or however you prefer.
