Instructions
Step 1
In a small bowl, whisk balsamic vinegar, honey, garlic, salt, and pepper. (3 minutes)
Step 2
Heat 1 tablespoon olive oil in a skillet over medium heat and cook chicken until golden and cooked through. (6–7 minutes per side)
Step 3
Pour balsamic mixture over chicken and simmer until slightly thickened and glossy. (3–4 minutes)
Step 4
Remove chicken and keep warm. (1 minute)
Step 5
In a saucepan, bring chicken broth to a boil, add orzo, and cook until tender. (8–10 minutes)
Step 6
In the same skillet, heat remaining olive oil and sauté spinach until just wilted. (2 minutes)
Step 7
Stir spinach into the cooked orzo and season lightly. (2 minutes)
Step 8
Serve chicken over orzo, drizzle with balsamic glaze, and finish with crumbled feta and parsley. (2 minutes)
