Instructions

Step 1
Mix all meatball ingredients together and form balls.
Step 2
In a big pot add a tablespoon of Olive oil or Vegetable Oil and add 4 diced Roma tomatoes and 3/4 onion diced up and 2 teaspoons of mined garlic and sautee together. Add 1 tsp salt and 1 tsp garlic powder
Step 3
Then add 10 cups beef broth
Step 4
Once it starts to boil add meatballs and 4 diced potatoes and simmer, covered, for 10 min (taste broth if you think it needs more seasoning add more salt).
Step 5
Then add diced Zucchini and simmer, covered, for another 15 min.
Step 6
If need to add more water or broth
Step 7
Serve with cilantro and slice of lemon.
