Instructions

Step 1
Place the garlic, egg white, soy sauce, sesame oil, white pepper, 1 Tb. cornstarch, and salt in a mixing bowl and stir to combine. Add the chicken, toss to coat, and cover the bowl. Chill in fridge for 1 hour.
Step 2
Dust a baking sheet with the 7 Tb of cornstarch, add the chicken, and turn it in the starch until it is completely coated, adding more starch as necessary.
Step 3
Add vegetable oil to a large pot until it is about 2 inches deep and warm it to 350° F. Shake the chicken the remove any excess starch.
Step 4
Working in batches to avoid overcrowding, carefully add the chicken to the pot and fry until golden brown and cooked through, 8-10 minutes.
Step 5
Transfer cooked chicken to a paper towel-lined plate and let it cool slightly before serving.
