Instructions

Step 1
1. Heat olive oil in a large pan over medium heat. Add the onion and cook until soft.

2. Add the chicken and brown on all sides.

3. Stir in the red peppers, courgettes, and carrots.
Step 4
4. Pour in the saffron with its soaking water, add salt and pepper, then cover and simmer for 20-25 minutes until chicken is cooked and veggies are tender.

5. Add the peas in the last 5 minutes of cooking.

6. Meanwhile, soak the bulgur wheat or couscous in boiling water or stock for 10-15 minutes until tender.
Step 7
7. Fluff the bulgur or couscous with a fork and serve alongside the chicken and veggies.
