2 x 8.5 ozbrown rice and quinoa mix
packets
1 lbground turkey
1 x 14 ozcan black beans
drain + rinse
1 cupfrozen corn
1 cupfrozen fajita veggies
½ cupmild southwestern salsa
1can mild green chiles
don’t drain
1 Tbsptaco seasoning
1 = mild, 2 = more flavor
1 ½ cupsshredded cheese
cheddar, Monterey Jack blend
cooking spray
or a little oil
Instructions
Step 1
Preheat oven to 375°F
Step 2
Spray a 9×13 casserole dish
Step 3
Brown the ground turkey in a pan until cooked through (no pink), then set aside
Step 4
Microwave both grain packets per package
Step 5
Add to the casserole dish: quinoa and rice packets, cooked turkey, black beans, frozen corn, frozen fajita veggies, salsa, green chiles, taco seasoning. Stir everything together. Sprinkle all 1 1/2 cups cheese over top.
Step 6
Bake uncovered 12–15 minutes, until hot + bubbly and cheese is melted
