Creamy Rigatoni and Sausage

Rigatoni with hot sausage and creamy tomato sauce

Instructions

Step 1
Brown sausage in olive oil, break up with spoon
Step 2
Remove sausage from pan
Step 3
Add Butter until melted then add shallots
Step 4
Add salt, pepper, and Italian seasoning
Step 5
Add garlic and sauté until aromatic
Step 6
Optional: add sun-dried tomatoes
Step 7
Add tomato paste and mix for 1 minute

Add crushed tomatoes, simmer until rigatoni is done (add a pinch of sugar if tasting too acidic)

Cook rigatoni until al dente
Step 10
Add 1 tbsp of pasta water to sauce

Add heavy cream
Step 12
Taste and add more seasoning as necessary
Step 13
Add sausage and pasta to sauce, stir to combine
Step 14
Toss with Parmesan and Parsley
Step 15
Plate and top with grated Parmesan
